Potato Soup

As promised….here is my potato soup!  I decided it was a perfect day to make soup with the snow day and really having no desire to leave my nice warm apartment.  After Googling slow cooker recipes using the ingredients I have, I saw a recipe for potato soup. I had a bag of potatoes in the kitchen waiting to be used for something, so I figured that would be perfect.

4 potatoes                                        1 cup milk

3 cups chicken broth                  2 Tbsp. flour

1 cup water                                     Salt, pepper, onion powder, basil

1 1/2 cups frozen carrots

I put everything into my crock pot (except the milk and flour) and let it cook for about seven hours on low. Then I mixed the flour with the milk and added a bit of the broth to the measuring cup to help the flour dissolve a little more. I stirred it in, used a potato masher to break everything up a little, and turned it up to high for a little over a half hour.

It was pretty good. I needed some celery, but I just didn’t have any. Anyway, I’m pretty sure I’ll have another snow day tomorrow, so we’ll see what I can come up with then. 🙂
