Quick Brown Rice Pudding

Every now and then I get into these fun little cooking moods, so here’s my adventure for the day. I made a batch of brown rice the other day and have had leftover sitting in the fridge since then. I’m planning on turning some of that into Ground Turkey Stuffed Peppers tomorrow night, but tonight I wanted a quick dessert.

1/4 cup milk (I actually used a bit of my fat free caramel macchiato coffee creamer along with the milk)

1/2 cup pre cooked brown rice

1 tsp. Cinnamon

1/2 tsp. Vanilla

Put the ingredients into a saucepan and cook over medium heat.

Loved it! Exactly what I was wanting to eat!
